Back to simple old Nick again :)
Just make a normal Apple Chutney - With a bit of pickling spice and a bit of onions and then add something like a Dark Beer/Porter or Stout - Something with a bit of ooommpphh as the cooking process can reduce the strength of some flavours. If it does loose a bit of strength you can maybe add a dash of Tabasco to revitalise the beer.
The vinegar you use should really be something like a Distilled Malt or something that does not have much taste so that it will not knock the flavour
