Roast Chicken!

Last night for dinner we had guests over, so I cooked 2 roast chickens. Miraculously, there is only white breast meat left, everyone ate the legs wings etc, normally the bits that get left! Does anyone have any ideas what to do with the breast meat, other than sandwiches??

Sounds about right, you can fry off the pepper, onoins with the fajta mix and then chuck in the chicken and give it a mix round. I like the sound of your version though!

Hey, I made the fajitas for lunch, went down a storm, but I'm not sure if I did them right. I didn't really have to cook anything, so I warmed up some tortillas, chopped some red and green pepper, grated some cheese, shredded the chicken, and let everyone put together their own torillas with guacamole and sour cream (shop-bought I'm afraid!) Is that how it is meant to be done?

chick and bacon pie,fry bacon,mix chick,bacon with tin of condenced(sp) soup i use chick but could use mushroom if liked, top with mash pots which have been boiled with veg stock cube pop in oven very tasty and low fat!

Chicken fusilli,

Cook some pasta, then in a frying pan gently cook some onions garlic and chillis in extra virgin olive oil, add some sun dried tomatoes maybe some muchrooms (not necessary) then add the chicken to warm though. Add to the cooked pasta and a handful of basil and some parmesan. We have this so often in our house I can't tell. A firm favorite!
