Green peppers

I seem to have an abundance of green peppers, can anyone suggest any nice recipes or any way of preserving them?

When I grew my own peppers, if I had too many I just halved or sliced them into large pieces, then open froze them on baking sheets before putting in bags. I could then take out however much I wanted for using in cassaroles, quiches, tarts, soups and the like.

3c is 3 cups of sugar. There's a list of abbreviation on the site and conversion of cups into other measures. Very useful. Hope you make the relish.

Thanks for that, that is a really good website!! Found a nice recipe for green pepper relish which I might have a bash at. That is if I can work out what "3 c. of sugar" is!!??

www.cooks.com have over 400 recipes for stuffed peppers!! Lots of other sites with green pepper recipes if you google for them. Will try and find out how to preserve them from my friend who has an excellent book on the subject of preserving. Smile
