I have a vegetarian guest arriving for the weekend does anyone have a tasty and exciting recipe without having to spend too long cooking when they arrive I don't mind preparing something earlier in the day Smile

How about fajitas? You could put some toasted cashew nuts in the veggie version.

agree with the curry, but i would do a medium vegatable one, a mild and creamy potato one with coconut milk, and a hot mushroom one with tomatoes. risotto also lots of pasta recipes are good. i love honey roasted vegetables, a meal in themself if you want

I am a carnivore, but also love veggie food - I think that the curry is a great idea because it can just simply be heated and indian food is predominantly veggie - think onion bhaji, saag aloo, pakoras etc. I would make one big veggie curry, a chicken one and a prawn/fish one and make all the sambal veggie and everyone will be more than happy and your veggie guest won't feel left out. I agree with Porridge about making similar meals. I am vegetarian and I hate the thought of putting my friends to a lot of bother just for me. I usually base my meals round the meal I am cooking for the rest of the family or the other way round eg I will make risotto and cook a chicken breast for the meat eaters to have with it.

how about a veggie curry, you could maybe make a meat curry for your other guests with some side dishes etc., and then everybody will have a similar meal, also curry is the best thing for cooking beforehand as it always tastes better the next day.

For a tasty veggie risotto, try courgette, pea, mint and Parmesan. I cook the diced courgettes separately and add them almost at the end.

how about a pasta bake in a cheesy sauce with a mixture of vegetables? (sweetcorn, red peppers, tomatoes, broccoli, peas, broad beans), topped with grated cheese and served with a green salad?

Is the vegetarian the only guest? If not what are you giving your other guests, or what are you eating. Maybe you could do something along the same lines but without the meat or fish.
