What is the best way to store garlic so that it stays fresh? I have a big bag and won't use it all before it starts to go off.Thanks.

Hi ssarah350, cook 6 or 7 cloves of garlic in butter, add some flour. Then add chicken stock and white wine and simmer. Strain and cool a bit . Mix an egg yolk with cream and whisk into the soup . GENTLY reheat and finally add some ground almonds to thicken and check seasoning.

What about using the garlic in the classic Chicken roasted with 40 cloves of garlic; or make garlic soup and freeze that.

Back to simple old Nick again :)

What about roasting the garlic and putting in a jar with Extra Virgin Olive Oil to give it a peppery taste, and use when necessary - I have tons of jars like that, with many veg in them - Like Red Peppers, courgettes, aubergines etc

Yeah, I do that too. Or you could crush it and freeze it in an ice cube tray. I usually put two crushed cloves into each hole. It works a treat.

Try peeling and storing in jars of olive oil - kept in a dark and cool place.
