Wedding cake

Help 2 young friends have asked me to make my popular chocolate fudge cake as their wedding cake three separate cakes 10" 12" 14" I have managed to locate the larger tins, but how do I work out the amounts and baking times for the larger tins? the recipe is for two 8" tins. Pxx

My oven would certainly take that size , not a problem, certainly done 12 inch ones no problems,not sure I would do a 14 inch one in any size but the person asked and I gave them the info as I found it !

They also did not say if they were square or round.

I don't mean to be rude, Frexy, but have you ever tried to make 2 gallons of cake mix in your Magimix? And then cook it in your oven so that it's not burned on the outside and raw in the middle?

PXX - I think you could just about make the 10" one in one piece, but the others I would do in squares and cut them using the tins you've found as templates.

you can base your measurments on volume.

An 8 inch tin holds 3 pints so a 10 inch holds 6 pints,12 inch 10 pints and 14 inch 16 pints.
Now you need to do your calculations.
10 inch is double the 8 inch recipe.
This is for round tins, square ones tend to hold more.
Just measure your tins to check their volumes.

I suggest making square cakes, then putting 4 together for each layer and cutting a circle the right size centred on the "cross" to make the layers, sticking the 4 together with ganache or frosting of your choice. There will be some "waste" but that's never a problem with choccie cake, and this will be far easier than trying to make huge sponge cakes, which are almost impossible to get right in a domestic oven.
