soggy roast potatoes

Confused is there anyone out there that could help us with the dilema of soggy roast potatoes Cry theyre lovely and crisp when they come out of the oven. the problem is keeping them warm/hot and crisp. we have put them in the bain marie but the condensation makes them all wet and soggy. if anyone knows, other than deep frying them, how to keep the roasties crisp we would very much appreciate it!!!! It may just be the time of year-the last of the stored potatoes are out at the moment and they aren't much good for much. Try new season potatoes if you haven't already.

Just on a hot plate with adbsorbant paper under neath
i presume you are talking about a commercial aspect rather than just home cooking?
Keep away from moisture and take them out of the oven at the last minute. I.E like yorkshire puds
Dont deep fry them, it makes them taste awful.
