Bread Disaster

Hi, I'm new to this website - but I've just had a disater making bread. It is years since I've made it, and I followed the instructions completely - but the bread is 'doughy' in the centre and dosen't sound hollow when tapped. What have I done wrong? Did it need more kneading??? Someone please help Confused

Hi Bonnie10, your breadmaker will more than likely be able to mix and knead the dough. Find the model number on your machine and then look for it in this list on the Morphy Richards website [link]

If it is there you will be able to print a copy of it to keep.

Hi folks,
Another new girl here. I have a Morphy Richards Fast Bake machine, does anyone know if you can just mix and prove in this machine as I want to put it in my own tins to cook. The instruction book got damaged so I can't look in there for help. Confused

i did wonder that as mine beeps when you need to add things,but the recipe said to add all at the beginning,next time will try adding at the beeps.

aime don't put your fruit in at the beginning wait approx 30 min's.When I start my machine it say's 2 hours 50 min's when the time goes down and reaches 2 hours 17 min's there are 3 bleeps.When the bleeps stop I lift the lid and put my fruit in slowly and watch it for a min.Put the lid down and leave it to mix in.It will not chop the fruit up this way.I also put in half a cup of dried fruit.I find this just the right amount and it is very light and a good sized loaf.My recipe uses 3 level cups of flour.Yep,it is nice.Will be making another soon but just ran out of yeast. Smile

i did make it and was really nice i just ate it as was.was wondering about your recipe mine asked for 1/3 cup of mixed fruit didnt think that was enough so put another 1/3 in,the fruit did get chopped up as said to put in at the beginning is yours more fruity or should it be quite light,doesnt really matter as was very nice just curious i guess.

Your welcome aime.Have you tried it yet?
When I get some granary flour in Annie I'll try it out and see if I get the same results.Although it doesn't state the water temp' I always used tepid water and I melt the butter in the microwave to get the correct amount of tablespoons required for the recipe.
PS,I also noticed a difference in my electricity bill.
lol Sometimes I just make the dough for the french bread and make them into small rolls and bake them in the oven. Smile My daughter likes to make them into shapes.

Hi - I tried to reply yesterday, but a technical fault prevented me from posting!!! However, I made the granary bread which is really nice, BUT it sank in the middle - book says this could be too much water/temp of water, or too much yeast - I did follow the recipe implicitly, so I think this may be a trial and error recipe Confused Trouble is, all this lovely fresh bread and butter has knocked back my diet by about 1 month - need to get a grip I think!! Big Grin Big Grin

Hi Annie1034,thought you would like it.Pleased it turned out well.I always put 1 teasp mixed spice in.Can't remember if I have made the granary because I do a lot by hand as regards to bread making but the pizza dough and the rolls from the book are very good and the chocolate bread went down a treat spread with nutella.And for those that like peanut butter,that turns out well also. Smile

Hi aime2,I have just measured out 500grs of flour and you will only need 1 teaspoon of mixed spice.Any more and it will be over powering.

I have looked up a few recipes for fruit bread, if you are only using 1lb of flour, to add 31/2 teaspoons of mixed spice seems too much.At the most, the recipes use 1 teasp of spice, and any recipe that says 2 teaspoons of nutmeg,plus cloves, I think that is a lot, unless of course it's for a large amount of flour.I always use fresh nutmeg in small amounts. It's better to add less than too much.

i`ve got a brevelle bread maker looked at the recipe for mixed fruit bread in the book its asking for ground nutmeg & ground cloves neither that i`ve got so would you reccomend mixed spice dont really want to go out and buy them,would really like to try some of the different recipes in the book.
i was going to have a go at the french bread from my book but takes nearly 3 1/2 hours so would not be ready for tea so have fallen back on my fav of half white half wholemeal.
just read in the book it`s asking for 2 teaspoons of nutmeg and 1 1/2 cloves so would i do 3 1/2 of mixed spice

Well - the fruit bread is absolutely fab - really light and tasty! Kids totally demolished it!!! Next time I'll use slightly less yeast and a tad more mixed spice - this is going to be a family favourite I can tell!! Big Grin Big Grin

Hi blondie02, would you believe I've just made the fruit bread today, and it's cooling now!!! Can't wait to try it, it smells lovely! Rose so much it touched the lid so I think I will alter the yeast amount very slightly - the last 3 loaves I've made have been better than perfect! Machine must be 'broke in ' now lol. Got to go and get more flour later - I've run out!!! Only bought 4 bags on Weds!! Have you tried the granary loaf? Fancy that one next - will let you know how it goes Big Grin

Annie1034,did you make the fruit bread?If so,what did you think of it?The first time I made the french bread I served it with lasagne and salad.Didn't get to try it because it dissappeared rather quickly.I get in first now lol.

Hi Blondie & Joey - I thought when I read the recipe that mixed spice would be a better option than nutmeg - I'm going to try that one tomorrow! The french bread recipe was nice - I didn't shape it into a baguette it was just a large loaf. It looked a bit heavy, but was really quite light when you ate it - really nice - kids ate the lot when they got in from school tonight so I'm going to have to cook another tonight!!!!! Hope the machine can keep up with me! Big Grin Big Grin Big Grin
