Beetroot

I bought beetroot today but have never used or cooked it before - any ideas - to go with Rack of Lamb?

I would boil it for a while first unless it is very young - unlikely at this time of year. Also, you can serve it as a side dish - boil and then peel and chop into small cubes. Saute gently in butter then add white wine, salt and pepper and finish with cream and a little grated nutmeg. I used to serve this in the restaurant I worked in and it was always very popular. Plus, it is dead easy to do!! Develish
