moist chicken nuggets

Does anyone have any tips on making these at home? I've tried a few times but they seem dry. I bake them in the oven but not sure if I cook them too long. Think I've seen somewhere about soaking them in buttermilk first. Also any tips about getting a fussy 5 yo to eat potatoes?

Have you tried Nigella's Ritzy chicken?My kids love them and they aren't the easiest of kids to cook for!
Soak your chicken breast pieces in buttermilk,a couple of hours will do but overnight is better.Shake off the excess then dip in Ritz biscuit crumbs.Fry in oil. Ta-da!

I'll never moan about my kids again. They ate practically all veg and salad when young and still do although youngest has been a vegetarian for 2 years for moral reasons and not because she didn't like the taste. Smile

i made some chicken strips with leftover roast chicken dipped in egg then breadcrumbs,i fried them in butter and olive oil then popped them in the oven whist frying the rest.

i do pink potato mash the pots and add a good squirt of tomato sauce they love it.or sometimes cook selection of veg potato,sweet potato,butternut squash,cauli,carrots whatever thats around then mash it up i used to do it when they were babys but started to do it again to get more veg into them,a big spoon of baked beans over the top of it helps aswell Big Grin

Nuggets - my attempts at changing from chicken breast to thigh was a failure, yes I know the taste is better but the texture is, well different - sort of rubbery for them, shame they wouldn't try squid then they would know what rubbery meant. I fry my nuggets in vegetable oil and briefly pop them in the oven to ensure they are cooked through whilst I batch fry the rest. With friends coming after school I'm catering for at least 6 and if they like something they can eat huge amounts. The oven bit has to be brief otherwise they become tough and the dog has them as the girls eat less.

Back to chicken nuggets-no don't bake them but also try using chicken thigh meat rather than breast-more flavour and less dry I find.
I was going to suggest potato slices topped with cheese but Lucy already suggested that. My daughter was brought up on "cheesy mash" at weaning but developed a food intolerance that put her off most food-I'm still coaxing her. She may come round eventually-one child psychologist said you have to offer a child a new food about 20 times before it's acceptible. Hug

I spent about a month bribing my son to try new things, he is now 3 1/2 and although it seems an expencive way of doing things it was worth it this is what I did-

He was about 2 1/2 and when set a challange will try his hardest to win so I went and bought a load of toys in the sales I then wrapped them all up and put them in a sac I also got a star chart I then went to work and made a load of fantastic wholesome food including fish pie (or bob the builder fish pie in our house!!) shepards pie, macaroni cheese etc the list goes on every night for supper I would put one of these dishes infront of him and challange him to eat the whole lot in return for a lucky dip in the sack of toys and guess what he ate every last scrap every night for about 2 weeks then I knew that it was not a case of him phisiclly not being able to tolorate the food it was just him being fussy and pig headed I then moved onto rewarding him with stars and x amount of stars would = a reward ie a trip to the zoo a toy what ever.

It may seem e an expencive way of doing things but I am a human dustbin and will eat anything (within reason of course) and there for can not really understand how he could not like cirtian foods especially when I knew he had eaten them before and needed to test him. As I had expected he was making his mind up on food before he even tried it and after challanging him he discovered a load more flavours he loves.

thanks Adrian, I have tried the chicken like that, sort of southern fried taste and if they see potatoes with bits on I've no chance Big Grin Lucy she won't eat cheese either, AAARGH.
I have promised myself that I will let them into the kitchen to do things with me to see if that makes any difference.

How aboud doing some potato wedges. Par boil some smallish wedges then roast off untill cooked (I do about 25-30mins) I then chuck some herbs on (what ever I happen to have) as a seasoning then do a boiled egg and give it to your little one and let her dunk the potato in the egg, my 2 had boiled eggs with baby sweet corn and asparagus last night and love it or try with a favorite dip.
If she likes cheese you could always try either you or indeed your daughter (under your supervision of course!) grating some cheese in or if she has a favorite like chicken mayo, tuna etc put some in a jacket potato.

I always find involving my boys in cooking helps and then trying to be a little sneaky with the name of the food for example you could always mix some beetroot with some mash to make it nice and pink and call it barbie or cindys (got 2 boys so am a little out of touch) favorite and get her excited about eating something that one of her favorite toy or tv characters would eat.

Hi Carol, before I go on about the potatoes do you flour your nuggets with flour and herbs and spices? Just thought I ask.

Potatoes can be blah in taste. My way of roasting them is this way. I strongly believe in non stick pans. Ok what I do is cut potatoes in small chunks and put them in a bowl. To them I add some rosemary, salt pepper, garlic bits or flakes, and a bit of sage. To that i add some olive oil to coat them. Mix well and place in dish with no water nothing. They will come golden brown and taste heavenly.

Fish is a matter of liking or not. I like fish as long as there are no bones. LOL

thanks Boneyapper, I'll try frying them in olive oil. Potatoes - mashed, boiled, roasted, sliced and coked with milk, cream etc. baby potatoes, baked potatoes - she won't even try them Frown she will occasionally eat potato croquettes (frozen).I must admit I do sometimes use convenience stuff for them, but after seeing the Jamie Oliver prog. I felt really guilty although mine don't like twizzlers Big Grin She wont eat fish or eggs either, but loves fruit and yoghurt Roll Eyes

Carol, I do them at least once a week and they don't come dry. But unlike you I don't bake them. I shallow fry them and keep turning them until they are golden brown.

Your 5 year old doesn't like potatoes? Strange! Well tell me how you do them ok..

I believe your nuggets come dry because you bake them. The oven dries everything up.
