Bean recipes

Can anyone suggest any good recipes that use tinned beans (red kidney beans, cannellini beans etc)? I would like to use these more in my cooking but am stuck for simple ideas. I only ever use these in soups or chilli con carne.

I do this Chilli bean slice. Daughter loves it and now makes it herself for her Uni friends.Bear in mind that we are veggie so use vegemince but you just substitute ordinary mince.
Line a tin ( something like a Swiss roll tin) with 1/2 pkt thinly rolled frozen puff pastry.
Fill with a thickish Chilli mix to which you add a handful of cooked rice, a good handful of grated cheese,you already have your beans and tomatoes in the chilli. Wet round the edges and cover with the other 1/2 piece of puff pastry. Brush the top with egg and scatter a little more grated cheese on top. Bake in a hot oven for about 20-30 mins till lovely and golden brown. Very tasty.
I know it's a chilli but a bit different. Smile

I make a mean 2 bean chillie - using bolotti and kindney beans.

Toast some cumin and chili powder in a pan.

Add a good handfull of chopped streaky bacon and fry. No need for oil, the fat from the bacon will mix in with the spices.

Then add some mince - beef, pork, its upto you - and brown.

Add some onions, celery and carrot that you have sweated in a frying pan. Also add some crushed/chopped garlic - it doesnt mater how you prepare it - and combine with the meat and onion mix.

Add a tin of drained kidney and a tin of drained borlotti beans.

Add in a glass of beer - Bud, Miller something like that.

Add a tin of chopped tomatoes and add some dried oregano and season.

Bring to the boil, reduce the heat and simmer for 25 minutes minimum, the longer you leave it the better.

Arrange some tortilla chips in a bowl, spoon over the chillie, and grate some cheese(chedder or monterry jack) and place in a pre heated oven(200 - 220 c) for 10 minutes until the cheese is melted.

Garnish with some fresh corriander and sour cream. Enjoy with a cold beer.

Hi Helen, you want a salad well here is one.

1 can kidney beans
1 can corn
1 diced tomato
half diced celery stick
salt and pepper
chives (instead of onions)
Mayonaise to bind
keep in fridge to cool
can be served with fish or chicken

By the way the other beans you mentioned can be used in a similar way

you could try them in salads, if you put the word in the "search for" and make sure other box says "recipes" you should get a list of ideas. Smile

Have you tried re-fried beans? 'Sir' loves them.. In a frying pan soften garlic and a little onion or shallot.. add chillies to taste. Cook until soft then add a tin of cannellini, borlotti or kidney beans, cook for a few minutes, then partly mash!! You want to keep some texture, add salt and pepper to taste. Serve with chicken or pork. I only use kidney beans for chilli or bean salad.
