I know,curries and kebabs are the usual fodder, but what do you get up to in the kitchen if you forego these "on the stagger home" delights? Picture it-you're bent over the fridge peering in with one eye shut to beat the double vision, belching and swaying, looking for inspiration. I'm sure some great (at the time) dishes have been created this way. I'll tell you mine.
Open fridge. Low and behold-a half empty tin of sweetcorn, some eggs, a bit of cheese, spring onions and leftover meat pieces.
Put the drained corn in a bowl with 2 heaped tblsp plain flour-add s&p and stir to coat. Add any or all of the other ingredients then add one egg and mix to a sloppy consistency.
Shallow fry in medium hot oil about 3 minutes on each side.
drain on kitchen paper then enjoy-they're delish Big Grin
PS if I add cheese I cut it into 1cm cubes so you get pockets of melting cheese in the patties-I'm getting hungry now-just nipping to the fridge Big Grin Big Grin

Nothing wrong with grilled fish fingers-convenient and I think quite healthy compared with some of the junk kids eat today-blimey I sound like my gran!
I like them on bread too but I put loads of vinegar on them which means they go all mushy but who cares when you've had a drink Big Grin Big Grin

I have to admit that I still buy fish fingers for my teenage girls to midnight munch on when they get home from partying! Grilled fish fingers with mayo AND Ketchup on WHITE bread - I get in trouble if we are out of stock. May I just add that eat very healthily the rest of the time!!!I Smile

I also love cheese but not the creamy or gooey stuff....I love Lancashire;Cheshire;Cheddar,Edam and Wensleydale....now my salivary glands are playing havoc!!

Blondie and Foodieloon you are mean people. Tempting an addict with such recipes. I have tried Boneless pork chops stuffed in a diffeerent way and instead of white wine I use marsala. I will make a note of these. Actually the only food I never put cheese on is Fish!!

Boney, you should try boneless pork chops stuffed with gorgonzola piccante and tarragon, the juices reduced down with white wine and dash of cream... mmmmm! I am complete cheese addict too, just waistline doesn't like it Cry

Please stop all this talk about Cheese. I am an addict. I am surprised I never get caught in the airports with all the Cheese I bring in from the different countries we visit. I put cheese in Omlettes and grated on soups etc.

It is definately Cheese and Biscuits for me and my OH. We always have some strong cheddar, somerset brie, stilton and emmental in the fridge... get it out before you go out, and when you get home the brie is oozing. I love it with onion marmalade, melba toasts and a nice glass of port.... we usually eat it in bed too!

SueMc - have just seen your first post. Am now starving!! One way of avoiding butchering your fingers whilst cubing cheese would be to cube prior to leaving, just to be on safe side. Saves time when you get in too so can eat sooner! lol

One of my favs is tortilla wraps absolutely stuffed with salad. Trouble is, if I have consumed to much liquid refreshment, all the food falls out before it gets to my mouth! Always keep fork nearby in case of emergency! Smile

I agree goldie, I had to question the use of hot oil by SUEMC, bit dangerous, and how do you cut the cheese into 1cm cubes with double vision? Big Grin

always have salady bits in the fridge - takes about 2 mins, just about as long as the bread takes. I don't do anything posh with it - just chop and serve!!!

Left over garlic flat-bread. Slice thin, drizzle with olive oil and grate some gruyere or cheddar cheese over (not too much) then grill!!!! Gorgeous and if you have some salad - even better!!!

Forgot to say fry spoonfuls of the mixture, although it would probably work if you added it all at once to the pan but try flipping it when you've had one or two! Cheeky
