My husband doesn't like spinach but he like rice... so I thought of trying spinach(disguised) rice and it worked. I saute the onions in a bit of olive oil or sunflower oil till golden brown and add spinach puree(spinach grind to a paste with little water in a blender) and then add rice and a bit of seasoning. Cover the rice and let it cook. U get a rice green in colour which is unusal but attractive and serve it with chicken curry or lamb curry. I usually cook the rice in the pressure cooker so I don't loose the nutrients of the spinach.... I am not sure whether u loose the nutrients when u cook in a pan Confused
Other thing is making veg parathas. Its torillas/chappatis made out of flour and grated or pureed veggies. In this way you get the nutrients but can't see the veggies at all. Hope this helps.

When I was young I also didn't like veggies as my Mum wasn't that creative with them. But when hunger strikes you have no choice. If I complained my Mum would say "You eat what the Convent provides" Reason is of course in Convents you have no choice. So it was take it or leave it. I think you have to do as I said previously dress up the veggies with flavouring. I make great Cauliflour fritters. My son never liked Cauliflour until I did them. Taste is important.

Yes to jen and prawny-why spoil the impact of your culinary skills for one awkward person in the house when others may get to appreciate it if they get used to eating it-you could always give him a pot noodle and tell him to eat on his own while you and the kids eat a hearty meal at the dinner table. No offence intended Cheeky Cheeky

How old is he?? Old enough to know that he needs a balanced diet? Do you have children? If so, remind him that they need to eat sensibly and that they need a good example to follow!

I'd say cook whatever you like. if he doesn't like it then he can go hungry. It works with children, so why not him??

Let him cook for a change then he'll see how hard it is to come up with a decent meal if half the ingredients are missing Mad

That is a very difficult one indeed. Does he also dislike Onions? It couldn't be that all veggies are on his bad list. What about Peas? You must sit down and have a serious chat about this. Maybe he was brought up with tasteless veggies. But now a days there are so many ways to dress vegies that give them a good taste.

There are veggie cubes same as chicken and beef. These Veggie cubes give good flavouing. My other suggestion is to add a packet of veggie soup. If there are noodles remove them before emptying the packet.
