2 Tbsp olive oil, 1 tbsp sherry vinegar, juice of half a lime, 2 teaspoon maple syrup and 1 teaspoon of grain mustard. Put in jar with a little salt and pepper and shake.
You can vary the quantities to taste - some chefs use a lot more oil to vinegar. Basically you should experiment with any oil, anything sour - vinegar lemon lime orange etc, something to sweeten it - honey, sugar syrup if you don't want it too tart, some mustard - any kind - to emulsify and whatever herbs, garlic etc you fancy.Still got mumps Cry Big Grin

into an empty jar put 2 tblsp olive oil, 2 tblsp balsamic vinegar, 1 tblsp honey, 1 tblsp soy sauce and for those who like garlic add 1 clove of garlic, screw lid on tightly and shake and then stir until honey is blended in. Smile Sue

How about this JillF1 -

I never measure ingredients for a salad dressing, just mix and taste until I get what I like.

Cider Vinegar / Oil (sesame & ev olive) / Honey / Dijon mustard / salt & pepper / mix everything well, add some toasted sesame seeds.
