Preserving Chillies

I've just bought a load of birds eye chillies but only need a couple at the moment, what's the best way of preserving them. Can I just put them in some oil?

Seriously, olive oil or similar plus maybe garlic and peppercorns or citrus pith may be nice-don't leave too long though

Just stick them in vodka and leave for a couple of weeks-then drink the vodka-WOW-what a kick!. Don't know what you'd do with the chillis though-sorry,missed the piont of the exercise a bit methinks?!

Chillies also freeze well - we keep our home grown ones in the freezer or in oil, both keep equally well.

Kareny1, You can put them in oil but make sure the container you use is perfectly clean, preferably been sterilised in hot water and then dried in the oven. Alternatively, thread them onto cotton and tie up somewhere to dry. Good luck.
