BLINIS - BUY OR MAKE OWN?

I want my blinis for new year to be really tasty! Has anyone made their own (which recipe) and do you think they are nicer than the bought ones? I cannot believe I haven't tried a blini yet but have offered to do some for a party with smoked salmon on - any other toppings nice for the vegetarians? Thanks a lot folks.

Second part of question. Scrambled egg with chives, cream cheese with roasted pepper strips, marinated mushrooms, finely chopped mozzarella with sunblushed or roasted tomatoes (put a pack of cherry tomatoes in a small ovenproof dish, sprinkle with balsamic vinegar, olive oil salt and pepper and roast for 30 mins). Have a good party - will toast you at midnight Big Grin Big Grin

Just had some bought ones last night and they were fine - grilled for a minute on each side. Usually the OH makes his own with buckwheat and plain flour 4oz each, yeast half a pack, sour cream and milk half pint each, 2 eggs separated and a pinch of salt. Chuck all exept egg whites in bowl mix well and leave to ferment for as long as you like. Whisk egg whites, fold in and fry little dollops of the mix. The main difference is that from this mix you get dozens of blinis for a couple of pounds whereas bought ones cost a fortune. Big Grin Big Grin

I am guessing that making the base of blinis would be the same or similar as Scotch/griddle pancakes? In which case they're not too hard to do I don't think.

If you don't think you'll have enough time then buy them. I have seen that Waitrose sells the blini bases on their own without any ready made toppings (in the chiller section), which I think would be better as then you could make your own toppings. I always think that the ready made stuff will either be too dry or too soggy!

You could probably top the bases with anything you wanted really. How about a dollop of a cream cheese/creme fraiche mixture on then top some with smoked salmon, roasted peppers, roasted or sunblush tomatoes, or whatever else you think of?

Linda 2 - I think that if you have enough time then it would taste nicer if you were to make your own. If you dont have enough time then I would diffinatly buy them from somewhere such as Tesco or Sainsbury's. Tesco do Salmon Blinis as part of there Finest range and they are good value. Sainsburys sell Cavka Blinis as part of there stock also good value. Weather you decide to make them or buy them have a Happy New Year.
