Luxury 5 Nut Roast

Has anyone made this recipe by Celia Brooks Brown? If so, did you enjoy it? If you have a favourite nut roast recipe, would you like to share it with me please.Thanks.

Not sure, I never have as it doesn't take too long to make, I have usually made it on Xmas Eve and then cooked it on the day. I am sure one of our experts on here could tell us.

Porridge thanks for the recipe, I'm not a veggie but I do love veg and nuts so I'm going to give this a try with the parsnips seeing as we can get them down here all of the time now and not just at Christmas. Have just sent my husband out to look for currants, glace cherries and black treacle if he's successful I'll be making my cake this week-end, providing the torrential rain that we're having at the moment doesn't cause a power cut (it frequently does) Sue

you certainly could Mary, I may try it with chestnuts next time I make it, you could also substitute the parsnips for another root veg if you wanted, but I do love the parsnip taste. Or leave out the yeast extract, which I do usually and I have substituted the herbs for whatever I have handy.

That sounds delicious Porridge. Will definitely try it. I guess you could substitute other nuts or even use a mixture of different ones, couldn't you? Thanks for this recipe.

Porridge

Here you go -
1 finely diced onion
3 crushed cloves of garlic
8oz cashew nuts (ground)
1 egg
tsp chopped chives
tsp chopped thyme
3 parsnips
100ml veg stock
1 tsp yeast extract
8 oz mushrooms (finely sliced)
saute onions and garlic
place nuts and egg and herbs in a bowl and mix with sauteed onions
peel and chop parsnips, boil and mash well - add to mixture akong with mushrooms
dissolve yeast extract into stock - add to mixture
grease and line a large loaf tin
place mixture in tin, cover with foil and bake for 1 to 1 and a half hours
I usually bake at about 150 - 190 but I have a fan oven so depending on your oven you might need to adjust this
Serve immediately
It really is tasty and quite easy to make - enjoy!

Hi Kromusdomus I am making the Pine Nut and Carrot Roast with Mushroom Sauce that is on the vegetarian Christmas recipes, I also have a great recipe for cashew nut and mushroom loaf if you would like it, just let me know and I will post it for you.

Thanks Rustie, The caramelised onion and lentil does look good. I have a recipe for Brie, cranberry and mushroom wellington which looks tasty too. Choices,choices!!!!! Smile

Nut Roast is something I have never cooked, but I have done quite a few of Celia Brooks Brown's recipes and they are superb. I have had a look at the nut roast recipe and it looks pretty good, but I will be doing the Caramelised Onion and Lentil Wellington.
