I made some fresh pasta (Tag) this morning and stored it in the fridge until teatime.Alas it returned to a hard lump and would not separate when I boiled it.Any suggestions please - Thanks

This reminds me of when my OH bought a pasta machine...I got home from work to find the kitchen looking like Widow Txxxxy's with coat hangers full of floured tag hanging from the fridge, washing machine, back of the door...and him with flour in his hair, his 'tash and all over his pinny!

Not much help to the original query, but thanks for the memory! Big Grin

I also leave it on a tray with flour or on a type of washing line. All the shops which sell fresh pasta here in Italy all leave in a tray with flour. Cheeky

Oops, sorry, that should read she puts it on a TRAY, not TRY. Big Grin

My mum (who is Italian) doesn't store it in the fridge. She puts it loosley on a try with some flour sprinkled on but not too much otherwise you'll end up with a gloopy mess when you come to cook it. If she has made a lot she hangs it over long rolling pins balanced between two chairs. Hope you have better luck next time as you can't beat the taste of fresh pasta. Big Grin
