took a note of your recipe sounds yummy havn't tried it yet but i will do getting sidetracked with xmas bottling wine and making mince pies i know its a bit early for the mince pies but they wont reach xmas dayhave to make another batch before then and let out my waistband a bit ahhh

sorry about the delay in replying - been a bit busy.
cook a cup of good quality extra virgin olive oil with 100g of thickly sliced parmesean over a low heat for 10 mins without stirring. (quite a small pan so the oil covers the cheese). take it off the hjeat and add about 1/2 teaspoon of black peppercorns and leave it rest for at least 2 hours.
use the oil with a squeeze of lemon juice or a dash of balsamic as dressing. is yummy with rocket and also tomato salad.
don't let it get too hot or the oil goes funny.

another interesting way is to make parmesan oil. it is really tasty in salad dressings. let me know if you are interested and i'll put on a guide of how to do it.

thanks a lot Chaira Cla i shall try that hopefully my parmasan will last till the next time my daughter brings me some for more from italy

Hil I'm in Italy so I'm always buying Parmesan (parmigiano) in large quantities. Anyway the best way I've found it to first wrap it in greaseproof paper or baking paper, then put in a plastic bag in the fridge, mine lasts for months like this.
