I cooked a Chicken Rissoto recently which required lemon rind. Whilst I am sure a little wax won't harm me, where can one obtain unwaxed lemons on the High Street ?

Terrydox........Forgot to mention that when I went shopping on saturday I found some !!!!! I've never seen them before down here because they only sell them in El Corte Inglese in Puerto Banus, the Harrods of the Costa del Sol. I don't usually shop there but I like to go and have a mooch around , it's full of extremely rich people i.e. minor European royalty, ex east-end gangsters and Russian prostitutes, so occasionally we pop down to see how the other half live. I guess they can't all be bad people if they use zip-lock bags. Sue

Rustie, I freeze lemons cut in half, and when a recipe calls for the zest, I zest whatever is needed whilst the lemons are still frozen, that way, if you are quick, you can put the zested frozen lemon back into the freezer. - Be warned though, hold the frozen lemon with a cloth or glove whilst zesting - frostbite! When juice is needed, I just thaw out the appropriate amount of lemons and juice in the normal way.

Talking of my speciality being silly answers, I'm not really sure if this is going to sound silly or not, but here goes anyway.
If you have nice fresh lemons and don't want to just keep them in the fridge for when you need one, why not grate the zest and squeeze the juice then freeze in an ice cube tray?
I am sure the lemon juice would be fine, and if you put the juice of one lemon per cube you would know exactly how much to take out for your recipe.
The zest I am not as sure about, would it freeze well? and you would probably just need to wrap it in cling film or foil, if you wanted it kept seperate from the juice.
But as I type, I am listening to AWT on Saturday Kitchen and he has just mentioned buying dried orange zest, so how about drying the zest?
TerryDox, you wouldn't need the freezer, just leave outside somewhere.

I DO specialise in silly answers, but only when the questions demand it, hence the practice.
Lemon meringue pie is good too, cold in warm weather and warm in cold, if you see what I mean. ( northeners may get confused by that)
I should think that good fresh lemon an honey is a good thing too at the moment.

Well up here in the north east we will probably make lemon granita or lemon sorbet whilst the weather lasts and this hot period continues.

This is the weather for a Sussex Pond Pudding, or one of those yummy lemon puddings where you get the sponge on top and the saucey stuff underneath.
TerryDox, there is a first (and last) time for everything, and as for the silly question, don't worry, I'm used to it.

Tipsyturvy..When I have too many lemons I either cut them in half and freeze them in small sandwich bags or slice them put them on a tray,freeze them then put the frozen slices into a bag. Keep them in the freezer and add to your drinks ie gin and tonic.

Porridge, Asda's also sell them in pack of four, I buy them and keep them in the fridge, they seem to keep for ages.

I never waste three lemons Porridge, use them in a really nice Mary Berry 'Easy Lemon Cheesecake', there is a recipe on the BBC site

why is it they only sell unwaxed lemons in a pack - if you don't need four you have three wasted lemons!! I've noticed that in Tescos too.

I can buy a pack of 4 unwaxed lemons in Morrisons for 69p.
Failing that, wash them in hot soapy water with a scourer, not too hard, and then rinse in clean water.
