Yesterday I watched Sophie Grigson making treacle tart and she blind baked the shell using clingfilm - won't it melt in the oven???

Yes I did, 4 layers, and I made almost like a parcel with it. But it shrivelled, went hard and split.
So even though it seems to work for you, I think I will stick to greased proof paper.
Maybe you could demonstrate it properly one day on GFL?

Hi Rustie, Did you use 3 to 4 layers of cling film totally covering the beans when in the tart case?
I use any of the cling films/food wraps and have always had success, as long as one uses a 3 or 4 sheets over lapping each other.I have not stuck to one brand.

Hi Paul,
Can I be really pedantic and ask if it has to be "Cling Film" as the brand name name one, and does it have to be PVC or non-PVC, or a microwavable one?
I tried it with some of my supermarket brand one, which incidently does say not to use in microwave or conventional oven, and whereas it didn't melt as such, it did shrivel up and the beans all spilled out when I removed it.

Hi Karen, No it really does not melt. When you bake blind with cling film its best to use 3 or 4 sheets and to make them big enough so they can be gathered together in the centre over the baking beans. This way is great as once baked one can lift them out in the cling film.
I always bake blind at 175c for 25 to 30 minutes also

Thanks for the response, but I have to ask, surely the film will start to melt especially as Sophie cooked the shell at 190 degrees for 15 mins????

Hi guys, This is a method I always use but I use 3 layers of clingfilm so once baked one can lift out the beans without the cling film splitting.
Its a method I adopted some 8 years ago when Head Pastry chef for Marco Pierre White. Its a great method as sometimes parchment paper digs into the pastry and can cause holes.
The cling film does not melt at all and its a method that we have not shown on GFL as yet.

Karen I thought that exact thing. What was it she put it in for... 10-13 mins was nt it. Surely that would melt. Any one out there wanna help us out here?
