hello- I'm going camping for three weeks in Sardinia, I'd appreciate some nice ideas for cooking outdoors, I have a 2 ring stove & a fridge, I'm aware of Italian recipes as I live in Italy, but I'd appreciate some non- Italian ideas to impress my Italian friends who I'm going with. Luckily I'll be surrounded by good quality ingredients, so that shouldn't be a problem. I'm going to be cooking for a group of people, who aren't so big on veg, but love fish & meat.

pork, chicken or beef and vegies

Ingredients:
1-2 lbs whole pork tenderloin.
1-2 pkgs McCormick marinade of your choice.
2 sweet onions
1 lg pkg of mushrooms
3 assorted colour bell pepper.
1 bunch broccoli(cut up)

How to Prepare:

At home before your trip, cut up pork in 1-2 inch cubes and marinate in zip lock bag. Freeze and use as ice in your cooler. Cut up veggies in large chunks, and mix with thawed pork and marinaide in a foil "hot bag". Put over your campfire on a grill or a grill for 1 1/2 hours. Take off and enjoy.


shrimp scampi


Ingredients:
shrimp
spaghetti
garlic
parm cheese
oil/butter
veggies/spices of your
choice


How to Prepare:

De-shell, de-vein, and cut
tops of shrimp.

Place shrimp in a tin foil
bag with garlic, spices/
veggies of your choice.

Cook over fire, on coals or
on grill turning well till
cooked.

Boil spaghetti on burner or
over fire. Drain. Mix with
shrimp use more oil. Salt/
pepper to taste.

Serve with garlic bread.



chicken in a can

1 Whole Chicken, seasoned however you like
1 Large Can, such as a large coffee can
15 Charcoal Briquettes

Punch holes around the can 1" from the bottom (approx. 1" apart). Next, place the charcoal in the can and light. Allow the charcoal to ash over, then place the chicken (completely wrapped in foil and seasoned) in the can with legs up. It's okay if the legs stick out a little. Let cook for 3 hours no turning or tending to is necessary). After cooking, unwrap the chicken and it will fall off the bone. Good eatin'.


Foil Bag Surprise

1 package of polish sausage sliced
1 green pepper sliced
1 onion sliced
1 package fresh mushrooms sliced (We use two, because we love mushrooms)
1 package hash browns, or potatoes o'brien
garlic powder, salt, pepper to taste.

Mix all of the above in a foil bag. Roll up end to seal. When heated all the way through, cut a slit in the foil and serve out of the bag. NO DISHES TO CLEAN!!

The beauty of this is that you can make it at home before you leave to camp. Just pitch it in the cooler before you leave. When you get there throw it on the grate with a loaf of French bread. rolled up in foil)

My family loves this! It's a cinch and easily feeds my family of four with some left over.

hi chiara cla,our family are big on camping and with a bit of improvising you will surprised what you can get up to on a camping stove!a good curry/chilli with rice,fish and chips just pan fry your fish on one burner and cook chips on the other!a good old fashioned stew left cooking and mashed potatoes.or if you really want to experiment invest in ainsley harriots book the big cook out he cooked most of his dishes on a camping stove or small barbie you can get some pretty compact ones now or just use a disposable one! some of our best times camping were chilling out with a beer and a barbie plus you can marinade your food of a morning,bung it in the fridge and it's ready for when you get back from a day out.good luck and don't be afraid to try anything you will be surprised what you can get up to!little eddie.

Back to simple old Nick again :)

Poaching fish is always good - Just take some basic stock or even just lemon and white wine and some foil/cooking parchment to seal it in.
