herbs help?

Hello I'm new here Smile I have an abundance of herbs in my window growing like mad.. I can't actually keep up with using them in my cookig, as I only have to cook for myself, and a lot just dies and gets wasted - so I was wondering, what's the best way to keep herbs for later use? Dry them or freeze them and if so how exactly? pre-chopped or whole for example? It's mostly mint, basil, roesmary, thyme, sage and coriander.

Hi chocy flower,
I have used the method you've suggested but the herbs never came out right when crushed them in the bag. The herbs defrosted too quickly and I couldn't crush them well enough.

Hi all, why bother chopping before freezing? I just put my herbs in a bag then into the freezer, when frozen just crush the bag, safes a lot of time.

Welcome Mokey! Another way to store fresh herbs is to chop them, put them in ice trays, top up with water, freeze them then add a cube or two to stews etc. when you need them. Though Kamila's method is probably easier! You are lucky to have an abundance of herbs growing in your kitchen. I'm not very green fingered, but I would like to try growing some now we're in a place with a garden & a patio. If I don't plant them in the garden, I'll use pots on the patio. :-)

i have some chives from tesco that have survived 2 winters now, outside. herbs from the supermarkets are designed to be used straight away, so don't feel bad if they die. they are not hardened and are packed in too close to grow properly. your best bet is to get them from a garden centre or grow them from seed if you want them to last.

You must have green fingers, that's fantastic to have such lovely herbs. I will try to water mine even if they are dry and hope for the best. I have bought a large pot of flat leaf parsley and it is doing well so far but my chives are looking very sorry for themselves.

Most of my herbs pretty much died initially, but I just cut off the dead bits and patiently kept watering the roots until the plants came back.. and now they're invincible! Smile One of the mint plants (which came from Tescos fruit&veg section!) has grown from one tiny leaf to almost a metre high! I'm quite chuffed with the plants and the whole kitchen/window area smells divine Smile

Hi Mokey,
Lucky you, that you can grow herbs. I seem to be very unlucky with them. I always freeze all my herbs, I buy big bunches and chop it up and freeze in plastic bags. I make sure that the chopped herbs are thinly spread inside the bag so it is easy to just break a piece of it.
