Hi, can anyone help, I am making tiramisu I beat the egg yolks with the sugar then beat in the cheese the mixture has curdled. Would anyone have any idea where I went wrong. I am going out to buy more cheese. I pray by the time I get back someone will have read this sos! as I am having a dinner party tonight.

Tiramisu

6 eggs separated
3 T sugar
1 lb mascarpone cheese
1 C espresso
1 T dark rum
1 T peach liquour
24 ladyfingers
1 Toblerone bar

Beat egg yolks and sugar until light yellow. Add mascarpone and liquors.

Whip egg whites to soft peaks.

Fold whites into cheese mixture.

Soak ladyfingers in espresso.

Chop Toblerone bar, fine.

Layer half ladyfingers on bottom of 8x8 pan. Pour on half of mixture, then half of chocolate. Repeat.

Refrigerate for 1 hour or overnight.

Hi All

Did not get a chance to log on yesterday as I had a manic day. Many thanks for the tips, as I said in my post I dashed to the supermarket to get more mascarpone, normally I would have at least two in the fridge talk about murphy's law. Anyway I repeated the process, beat egg yolks with sugar, this time I added the cheese a little at a time and ended up with a really creamy consistency "phew". In answer to your question (talk about going around the world) yes it was too late as it needed more time to set, so while in the shop got some rasberries, peaches and fresh cream made a very simple dessert by mashing most of the berries with some of the cream layered the lot topped with whole berries and everyone was happy. By the way the tiramisu was really great yesterday. I am making one for my friend for Sunday as she is having some friends for lunch so I will do as you all suggest and will let you know how it went.

Hi,

I know this is probably too late for your dinner party but I have a fantastic recipe for tiramisu that works every time. I mix the eggs yolk, sugar, vanilla essence and mascarpone in a bowl together. I whisk the egg whites seperately and fold the egg whites in to the cheese mixtureand then layer as normal.
