Storing eggs.......

........to refridgerate or not? Basic food hygiene/Health & safety when I worked in a residential home dictated they must be kept in the 'fridge. However, I have spotted a rather lovely terra cotta egg holder in the cook shop, in the shape of the bottom section of an egg box, that I think would look fab in our kitchen. What do others do: refidgerate or not?

storing eggs in the fridge is the best way unless you are going to eat them in a day or two. I normally take my eggs out of the fridge just before i make something.

here i go!!!air pkt in eggs is natures way of allowing air for developing chick to breath!,however eggs for use r cooled and stored so water content evaporates and air pocket gets bigger, so the larger the air pocket the staler the egg.best b 4 date on box is to sayit is exactly 21 daysafter laying-not packed, so u work out how fresh.delia smith never stores eggs in fridge for same reason as i! a cool room or larder will suffice.keeping lid shut as to not allow other flavours or aromas in vacinity to penetrate pouros shell.salmonella is most common reaction from eggs not properly cooked, so adhere to warnings on that.

I buy my eggs free range at my local farm and a big notice on the door,.... once you get home refridgerate your eggs. Bacteria multiplies much faster at room temperture inside the egg and outside,an egg stored in the fridge for a week is still fresher than an egg stored for just a day at room temperture. The shell is porous and may hold a high bacteria count. You can also store eggs in a very dark cold place for some time, must always be in their egg box and then turned round at least once a week. The eggs have a special coating which keeps them longer if kept in the dark and cold.

Without dault buy the chicken cos the fridge is the last place you want to keep them. Ask Ross Burden, he is a zoologist. But as Snoozy says dont break the sell by date by too much

I always store my eggs in the box in the fridge with the pointed end down. When I need them for cooking I take out the amount I need an hour before cooking.

I am lucky enough to buy fresh free range eggs from a local farm on a regular basis and I do not keep them in a fridge.

As a family of four, we have a fairly good turnover on eggs and I would suggest that if you aren't going to store them in the fridge then make sure that you are going to use them within a couple of days and only buy as you need. We've never had any problems.

I do not trust supermarket free range eggs (despite their label .. they are so different from the eggs that I buy fresh local farms) and if I have to buy free range eggs from the supermarkets then I make sure that I keep them in the fridge and bring them up to room temperature before I need to use them.

We've not had any problems with this so far (touch wood!!).

i always keep my eggs out of the fridge and sunlight, coz most recipes ask for them to be used at room temp. and they always get used within the sell buy date so never a prob!
