SPATCHCOCK CHICKEN!!! (Wot do I do with it???)

Hey Fellas, Have bought a tiny chicken and would like to "Spatchcock" it 1. How do I flatten the chick without seperating it completely? Do I cut out backbone then flatten it with something???2. When cooking do I put on griddle then in oven, or just griddle it????AND FINALLY............3. What are best herbs to use to marinade?? Always tend to use Garlic and (or) Chilli and would like to give the family a surprise for a change!!!! (Also mother in law here for dins sunday, and would like to impress her) Wink Thank you. Hi Chantelle, Had to grin at your reply (Thank You, so much ) Sounds like my back to be honest, WITHOUT the sissors!!! Am a bit jealous!!!! Smile Smile Will give it a go. Have always wanted to try this but never had the nerve before. How do I do Piri Piri?? Oh well I can just stick it in a bag with some oil and loads of herbs I suppose. (Like all Top Chefs do.... would youu believe that I did this for the first time at the weekend! Hope you're not squeemish! Try GFL Piri Piri (fantastic) cut down both sides of the back bone and take it out completely, best way, sharp kitchen scissors) then turn it over and press down firmy (you'll hear the bones crunch so be warned) Char grill as far as you dare without burning on both sides then finish of in a moderate oven, definately a winner!
