Ancho Chilli ?

Thread Starter: jennifer264    Started: Sat 06 Mar 2004    Replies: 8

In my search for a Spicy Corn Chowder recipe, I have now obtained the Covent Garden book " Soup and Beyond." Their recipe has as one of the ingredients 1/2 a teaspoon of powdered ancho chilli. Is this a special chilli?, Can I use ordinary chilli powder? What is it? If i buy some am I likelly to keep it in my cupboard.. never to be used again except when I make this recipe?
Finally where do I buy it from?
Any ideas??

Anchos(with guajillos and pasillas ) are important in the mole dishes of Mexico. They have little heat and much flavour, mainly wood smoke, tobacco, licquorice, coffee etc. Dodie who owns the CCC is an old friend and will help you with any queries. I'm taking a load to Sth Africa for my hands-on dems in May. A taste sensation!

It's a great book Frexy, got it via Amazon used books..the seller had bought two copies by mistake so it's brand new. Arrived in 3 days.. Good service eh!
The salt in the recipes is the last ingredient in the majority of recipes so I guess it is to taste really. When we buy the soups we only get the vegetarian ones and have not found them too salty, at least the Corn Chowder isn't, it's just lovely!
Meanwhile back at the ranch.. would leaving the Ancho Chilli out make a huge difference does anyone think?

Hi Snoozy,
Yes I read about the excessive salt in the Covent Garden soups. In fact in the chicken soup one portion had more salt than the sea and I understand a carton is two portions. They did reply saying they were going to reduce the amount of salt they used, to be fair.

Hi Jennifer264

you could try these people at their website [link] or Sainsbury stock some of their products. I brought some chipotle and ancho paste last week there. Good luck and let us know how it turns out.

Glad you got the other Covent garden soup book Jennifer, that was pretty quick.

Did a quick search and it would seem that ancho chillis are thick sweet mexican ones.
But take a look for yourself at www.spiceoflife.co.uk
