Coleslaw

Does anyone have a recipe for a really good creamy coleslaw. I hate the shop bought stuff so if anyone could oblige......

The one I do is very similar to Snoozy's but I don't use a lot of onion (don't like it) and I use French mustard in mine. also make sure the cabbage isn't too thick, nothing worse than chewing great chunks of cabbage! The secret I think is a good Mayonnaise , sometimes put chopped herbs in as well. and a few cashew nuts for crunch afterwards.I also like a little bit of very thinly sliced celery.
Had some once where a little of the oil had been replaced with walnut oil and that was delicious.

I don't think any one really minds! for really creamy coleslaw, use equal amounts of 'simply delicoius mayonnaise', mixed with salad cream and add some double cream, just adjust the amounts (start with a little) depending on how much veg you are shredding, p.s don't add too much onion, other wise it becomes quite strong and will detract form the creamyness

no probs. i do this one for work, always seems to go down well. i use white or red cabbage or both, onion, apple, carrot, nice creamy mayonaise, good dollop double cream, tblsp horseradish,1 tsp english mustard, juice of 1 lemon, sea salt and pepper to taste.
