meatball sauce

Does anyone know how to make swedish meatball sauce (like the creamy sauce ikea do) but not from a packet mix?

I think too that it's knorr who do the sauce, although have never seen it in any supermarket. I wouldn't normally buy packet mixes but I think this one is delicious. I have it with the meatballs, boiled potatoes and a dollop of cranberry sauce. Yummy!

I this could depend on whether you fry or simmer your meatballs in the first place, I personally would simmer them in a little stock, so would not need anymore stock for the sauce as I would be using the stock/juices left in the pan when the meatballs are removed, so karen's version would be the one I use, thank you karen will try it soon, the soured cream, I think will also give it an "edge"

The thing I am very puzzled about is what on earth there could be in a packet mix to make it worth buying???

Hello Sonia I admit I have never been to Ikea or sampled their meatballs so your sauce is probably the one hansitron wants. However as he/she did ask me to post the recipe I thought I would obligeSmile

I seem to remember that the sauce sold in IKEA is made by either Maggi or Knorr, so in theory it should be possible to "source-the-sauce" on the open market...(lol). I'll have a scout round the web and let you know if I find anything.

Karen,
Think your recipe is more Swedish for sure, but it is different from the Ikea one. If you have ever been to their store and had their meatballs - the sauce is light brown - whereas the proper Swedish one is lighter in colour and contains dill. The ingredients above are from Ikea themselves (think that's what hansitron was looking for) so it's just a matter of personal choice.

Hello Hansitron the recipe I have is not dissimilar to Sonia's it is from my encyclopedia and is supposed to be authentic Swedish
In the meatball pan mix 1oz butter with 1 1/2 tblspns flour to make a roux add 4oz cream and 2oz sour cream also 2oz stock salt and pepper to taste when thick add 1oz fresh dill or 1tblspn dried.

It's me again! Sorry that should read 1 teaspoon of flour and not 1 tablespoon - will make it far too thick.

Hi hansitron.
I know how they make their sauce and its really simple. In the pan that you have fried your meatballs you add 1/2 cup cream with 1 cup beef stock (from a cube), a bit of soy sauce (I put about 2 teaspoons) and about 1 tablespoon of flour. Mix it all together and bring to a boil - strain it for lumps and let thicken. I use this sauce on lots of things as it's so easy. Adjust the amount of flour to how thick or thin you like your sauce.
