can eny one tell me do we realy have to use suger in bread recipies as i am diabetic I like all breads frome pitta to eny thing

I never put sugar in any of my normal bread recipes.
The flour will feed it but I always use fresh yeast.

Richard I have tried making bread with sugar substitute and it never rose at all, was very dense, edible but not enjoyable.

The amount of sugar that is used in a bread recipe is so small that it is not going to affect your diet, however the bread will! You have to watch the carbs as they raise the blood sugar levels.so bread ,rice and potatoes need to be carefully regulated. The site that Ian suggested is an excellent one do try that.

You don't necessarily have to avoid using sugar in bread - you simply have to manage your diet so that it's balanced. You may the following useful:

Sugar is used to help activate the food, but the thing to do is try reducing it until you are happy and more importantly it tastes good

I think its there as a food for the yeast I don't know if you could get away with using a sugar substitute.
