Stilton & Brocolli Soup

Hi All! I've always loved Stilton & Brocolli soup when I've gone out for a meal but have found that shop bought are a let down. Anyone out there know a good recipe?

Sorry for taking so long Scott (I've been away for the weekend). I take cubes of bread and simply toss in olive oil then freshly grated parmesan and put in moderate oven. Be careful as they burn very easily.

I like to add a half cream/milk mixture to my soup before adding the stilton after the soup has been blended.

On todays Delia Online Recipe for the day (hush my mouth) there is a recipe for Celery Soup with Blue Cheese.. which I've made before and is really tasty.. along the same lines as these however it's got to be Big chunks of lovely bread for me to go with Smile Smile

i make parmesan croutons, just cube some stale bread and in a bowl i put chopped garlic, olive oil, grated parmesan. give it a good mix with your hand then onto a oven tray and bake till crisp in a moderate oven! good luck .kim.

hi, my way of this is, sweat some leeks,carrotts,1onion,and 2 celery stalks in a pan for 5 mins then add some stock , season and cook for 10 mins, put through a sieve discarding veg. reheat stock, add broccolli and 1 large chopped potato, cook for 10 mins then blend!!! add stilton just b 4 u serve!!! good luck kim.

I use a head of broccoli, 1 onion and a medium potato and enough stock and milk to give the required consitency once blended. Crumble in stilton at the very end just before serving and allow to melt. Lovely with parmesan croutons. An alternative is to substitute the broccoli with cauliflower and the stilton with mature cheddar cheese for cauliflower cheese soup.

hi michelle,
a friend of mine make`s it all the time.you just
cook your broccoli in some veg stock (or chicken)
until it softens .remember and season and then [put through a blender return to hob heat and then add
crumpled stilton.
you just need to keep tasting till you get the right flavour that suits you.
