Chilli Oil

I am a real cooking novice but am interested in making some chilli oil after having some poured over my pizza yesterday. Can I sidetrack the sterilised bottle issue and just buy a bottle of olive oil (which one? Greek, Italian, Extra Virgin, normal) and pour some dried chillies into the neck and re-seal. Are there any herbs that I can put in to make it look a little more interesting in the bottle?

Can I make garlic oil the same way?

How long do I need to leave before use?

If you want to buy a really good chilli oil instead of making it, you should check out ones by Belazu and Cuisine de Provence. We have had these before - they have dried chillies still in the oil and are not coloured. Because they are not coloured, though, you may think that they are not very hot - but be careful as they are pretty potent and get hotter the longer you keep them!

We have found them in different supermarkets so you may have to look around to see if you can get them locally.

I read a few articles on the internet about how easy it is to get food poisoning from making your own infused oils if it isn't done properly. This has put me off from trying my own as there is no way of telling if it has become contaminated with bacteria. Eek

Kim,

Would you use Extra Virgin Oil, or normal Olive oil?
also, would it work with fresh chilli's? Cheers, Scott..

depends how hot u like it and how big your bottle of oil. regardless of bottle size i would say just fill it 1/3 full of chilli. kim.

Thanks aheadsun. Think this will turn out better than Tesco's own chilli oil which looks artificially coloured. As I said, I am a novice. Is 1/2 a cup a legitimate measure or can I use a a teacup full of dried chillies.

yes u can just buy a bottle of olive oil, just pour about a third of it out and refill with about 4 chopped cloves garlic, about 1/2 cup of dried crushed chillies and an eggcupfull of whiskey!!! portugese cheff gave recipe to me, their piri piri oil they use, watch the colour change over the weeks and the stronger the colour the stronger the heat!!! and all i do for garlic oil is take out a little of the oil and fill up with chopped fresh garlic. just make sure all well sealed!!!" good luck. kim.
