Hi Paul, I tried to make some lemon curd steamed puddings today, they were an all in one mixture and came out very dense and stodgy. The recipe was from this site (Tamasin) and followed to the letter. Do you have a recipe for a lighter result? This one uses plain flour and baking powder so would self raising help? I did wonder if an ordinary sponge recipe (creaming butter/sugar first etc)would steam well? Hope you can help, I need a recipe for six individual puds. Thanks

Hi Sonia 13,

I steam a victoria sandwich recipe all the time with the addition of lemon zest 2 or 3 lemons and juice of one. The recipe below will give you a really light result.

You can place bought lemon curd in the bottom of the pudding basins or make your own curd.

For six puddings use

150g butter
150g caster sugar
150g SR flour
2 eggs
3 lemons zested
1 lemon juiced
pinch of salt
Method as for Victoria sandwich/ creaming method.

I have recipes that are a rubbing in method and a little heavier. Let me know if you would like it.
