hi all
i love to cook but there is one thing i can never get right no mater what i try and thats my rice for the stir-fry can anyone help ??????? from sabrina

Thought I'd answer Rusties question about the dogs' health on this thread as I don't want to 'spoil' Georgie's fame page!!

Rustie, the eldest dog suffered really badly with excema and allergies this year and we were advised to put him on a chicken and rice diet. It worked wonders, he stopped scratching after a couple of days and I would recommend it to everyone. Must admit that I hate boiling up the chicken and de-boning it as I'm a veggie - urrgh!!

Have you tried a rice cooker; I know we all have too many unused pieces of equipment but this is a really useful thing if you cook a lot of rice, particularly because it keeps it warm so if you are having a crowd around for chilli or whatever, it is a great help. It works on the same absorbtion method idea as Delia, but you simply bung everything in and turn it on, and that's that. They are only about £25 from Lakeland, or Argos are even cheaper.

I had a problem cooking rice and tried Delia's method, I find it works most times.

However, I'm now making a fair amount of it a week for my dogs and find that the microwave provides perfect rice everytime and have started re-using the micro for our rice!

Delia gave me the best advise to be honest, about when to stir and when NEVER to stir. Now my rice is fine. Have a look at a book of hers or look on her web site.

I had trouble for years, thought I'd never grasp it, but then listened to Delia and have not had a failure ever since, about 8 years now.

Although I've never managed it well myself, according to several chefs I've heard, it works best if the rice is as cold as possible - but make sure it is piping hot when served or you run into all sorts of problems with bacteria.
