winter warmer - too dam fattening potatoes

When I was young I was force fed baked potatoes with no butter or anything. I think that's why I've rebelled and put butter and cheese on everything.

Well after years of complaints from the small children that we were, my Mum started scraping out out baked potatoes and mashing them with the tiniest bit of butter and putting it bake in the skin. (She was beautiful and slim though, but not a good cook)

Over the years of MY cooking this has turned into:

bake potaotes in the microwave
scoop out the middle and mash it with everything you like, butter, cream whatever and place in a bowl.

Fry some bacon (but this can be omitted), some sauted mushrooms and some fried onions. Mix together with the mash and stuff it all back. Grate some cheese and bake.

Serve with baked beans.

All can be done ahead of time up to the baking stage so you can go out and then come home and stick it in the oven until its done or microwave it and stick it in the oven to brown.

You can add almost anything that can be added to the creamy brie mash as well as sweetcorn and anything that takes your fancy.

You can also add egg yolks and whisk up the whites and add these separately. This makes a much lighter dish that almost souflees in the oven.

This is a really filling, hearty dish that is cheap and easy to cook.....and we love it.

Hi Reshma,

How kind of you to comment on my food and what an honour that a tv chef like it.

I saw you on Saturday kitchen during Dwahli and thought your recipes were great but I'm not really brave enough to try them.

I visited your web site just before you went to India and I thought it really was a lovey site. I posted this to you but it had probably gone too far down the pile by the time you got back.

My husband is threatening to leave me! Why beacuse we are both hooked on your brie mash, I make it at least once a week and I'm sure that my hipps have expanded.

I have to thank you as it will be my comfort food for a long time.

Oohhh Untamed Chef, I used to make Boxty on the Griddle, a mix of grated raw potato, cooked mashed potato, bacon and spring onions, with flour and milk added. Then big dollops of the mixture cooked on a griddle pan like potato pancakes.

we recently paid a visit over to the Emerald Ilse and was absolutely astounded at the food and portion sizes they had over there. whilst we were there i decided i was going to try a dish called Boxtyand i must say it was the best mashed potato dish i,ve eaten in years.
I don't know how its made but it contains :
Bacon
Spring Onions
and mashed potato its then placed in a pie dish and baked in the oven,Its then served as a side dish. But beware it is extremely filling and on more than one occasion i was unable to finish my main meal,but it was worth it.

mammachef, what a great recipe for winter!

I do something similar to Champ to my mash - add some chopped spring onions to some milk in a saucepan and warm through. I use that to make the mash and then add some chopped bacon that's been dry fried to go crispy. Real comfort food, especially with some sausages and onion gravy!

I really love reading all the ideas you lot have -
isn't it great that there is so much innovation out there!

mammachef, i've seen your receipe for creamy brie mash and i cant wait to try it, i've learnt so much from this web site, i've only been on it a short while now i cant keep away. the only problem is i want to try everything and i have receipes comming out of my ears! when i do your brie mash i will let you know. look forward to some more of your receipes Alison

I agree about microwaving baked potatoes but beacause these go in the oven for a bake afterwards they go crispy round the bottom.

Then again, if I'm not baking them afterwards I only microwave them as mines a microwave oven and grills and conventional cooks etc.

mammachef that sounds really tasty, i also like mashed potatoes with milk and butter and also a good dollop of djon mustard especially with sausages. also horseradish is nice as well.

Lovely MammaChef. I do a similar thing but only add butter and a bit of garlic to the mashed baked potato. Then I whisk up some egg whites (how many depends on how many potatoes I'm doing!) and fold them in. Then pile mix back into skins and bake in a hot oven. They souffle up and look and taste spectacular! (Oh, and I don't bake them in the microwave. I think I have said before that I find micro baked potatoes slimy though possibly the addition of other yummy stuff changes this.)

MammaChef, this sounds absolutely gorgeous and I'm definitely going to try it tomorrow evening.

My mother used to make a cheese and potato pie which I really miss. As far as I knew it was simply mashed potato mixed with cheese and baked in the oven. There must have been a little something extra in there though, as however I try to make it now, it doesn't taste the same. Cry

Anyway, who cares how fattening things are? Remember, "diet" is only "die" with an extra "t"!!

Lovely MammaChef. This reminds me of my childhood where we ate Colcannon or Champ .For those that dont know what these are--they are Irish . Colcannon is made with mashed potatoes ,chopped cabbage or kale with butter and milk, and Champ is mash with chopped onions/scallions.butter and milk.As you say full of calories.!!I saw you mention Delia's Gratin of Prawns in another thread. I have some of her books including that recipe but never tried it. I will now . I also love her Hot and Sour Prawns in her Summer Collection. Thank you
