Thread Starter: Mrs Leigh    Started: Tue 19 Aug 2003    Replies: 8

Was just wondering if anybody had a nice recipe for Corned Beef Hash? I've always wanted to try cooking it but everyone I ask tells me a different way to do it! I just want a recipe that works well and is quick and easy! Thanx!

This is how I do mine - roughly chop the cornbeef and mix in a bowl with plenty of wholegrain mustard and lots of Worcester sauce (well, to taste really). Parboil the potatoes. Start by frying the onions - I like mine quite crispy, adding the potatoes, again frying them to a nice colour and then finally add the cornbeef and mix well heating through. I serve mine with a fried egg and lots of tomato ketchup!

Our corned beef hash, has always been like a corned beef stew. Just put enough potatoes for 3/4 in a saucepan with 2 roughly chopped onions, and 3 beef stock cubes. Just cover potatoes with water. Add 1/3 of the corned beef chopped up. Bring to boil and simmer till potatoes are cooked. Add pepper and salt to tase. Usually you don`t need salt, because of the salt in the meat and stock cubes.Chop the remaining corned beef into cubes. Place on the top of the stew, and warm through gently so the meat doesn`t break up.
It`s really tasty and filling, especially in the cold weather with some nice fresh bread. Kids love it.(I usually use 1 to 1+ 1/2 large tins)

Hash is one of those things you can add anything to that you have in the fridge, Leeks, Peas, Onions and garlic go well. Fry all the ingrediants well before adding the corned beef last. Do not over cook the Beff as it will go greasy.

I start by frying a sliced onion till soft, then add some chopped celery and carrot, add the corned beef cut into cubes, then add hot beef stock and a teasp of mustard. (I sometimes add some red wine or sherry if there is any open) then add some peeled and diced potatoes and bring to the boil. Cook till potatoes are tender then make little wells and break an egg into each. Cover till eggs are poached and serve with lots of crusty bread to soak up the juices.

mmmmm wonderful on a chilly winter evening.

Hello Mrs Leigh this is how i do it. Heat the corned beef in a pan add some cooked boiled potatoes i use left overs and break them up with a fork and add some cooked onion again leftovers altho I have used raw to give it a crunch and just mix together until hot adding salt and pepper to taste.
