Ingredients

Sodium Alginate and Edible Calcium Ions

Thread Starter: Mrs.Darcy    Started: Sat 24 Oct 2009    Replies: 5

I have found an amazing recipe that I cannot wait to try the only problem is that it includes these rather unusual ingredients so my question is:
1. Where is the best place to find these (I live in NI so online would be ideal!)
2. Are there any special precautions etc. to keep in mind when using them?

Many Thanks
Mrs.Darcy

Apologies to Mrs Darcy, but I couldn't find "Start A New Topic"! I have now.

Has anyone got some advice on pickling mushrooms? I have just cooked and bottled 12 jars of mushrooms and put them in olive oil. I have searched on the internet and all the recipes and tips are different.

I picked one I liked which was boiling the mushrooms in wine vinegar, herbs and garlic, spread them on clean tea towels to dry them off for several hours and then bottled them in sterilised jars under olive oil. I am keeping them in the fridge and intend to keep them for about a month. Though I thought I had got all the air bubbles out, there are still some very tiny ones in the jar. Is this going to cause a problem? I am paranoid about botulism, though as I cleaned them scrupulously and they have been boiled in vinegar I can't see that there would be a problem. Are there any experts out there who can advise?

The products are being sold by the world famous restaurant El Bulli.

They have some great recipes using these products, the website link is.

Go to the bottom of the page and click on "videos and recipes"

Please let me know if anybody can find a cheaper supplier.

Hi

I found the website in Ian's link too - very expensive!

You can buy the Algin Powder from good Art suppliers but it's probably best to go into a high street shop as the webiste I found is also expensive because of the high postage costs - typical!

Would be great to hear if anyone finds a cheaper supplier of the gluco powder too.

Thanks

Michael
