"The combination of scallops and bacon crops up in Scottish, English and Manx cooking. It is one of those wonderful anomalies of flavour balance. I’ve updated it a little by presenting it in a salad."

<b>Shepherds pie</b>

Shepherd's pie

"There are always leftovers from a roast joint, and they can be re-used in a number of ways. Although it’s simple, I think shepherd’s pie, using lamb, is one of the best recipes out there.

The recipe is said to have been the creation of shepherds’ wives who needed to make tough leftover mutton more palatable. Cutting it up small or pounding it would have helped, as would the gravy, but we of course now have the mincer and processor to help us."
