With its 1930s housing, neat shopping parades and well-kept gardens, New Malden looks like every other commuter stop on the route from Kingston to Waterloo—until you notice the proliferation of Korean restaurants.

Nobody really knows why Koreans were attracted to this leafy suburb south of London. It may have been the lure of the first New Malden Korean restaurant, which opened in the early 80s. These days Korean script can be seen on a third of the shop signs on New Malden high street. The 2002 World Cup raised the Korean community's profile in the area and general interest in the cuisine, thanks to a local restaurant offering cut prices during the tournament. If you're lucky enough to have a Korean restaurant nearby, sample kimchi, a fermented vegetable accompaniment to most dishes.

Eighteen-year-old Karen Choi works as a waitress at her parents' Korean restaurant, Palace, in New Malden. Her father runs the restaurant, and her mother is the chef in the kitchen. Karen's ambition is to be a leading fusion chef, combining Korean influences with British produce. She recently left her Culinary Arts course to concentrate on the family business.
