Variety is the key for a truly sumptuous picnic. Depending on how many you're planning to feed, try a selection of the following dishes.
Savoury tart
As the centrepiece to your picnic, try the Tomato, Goat's Cheese and Herb Tart from Tamsin Day Lewis. It’s wonderful sliced and served cold.
Salads
Tuscan bread salad, made with cubes of bread, basil, tomatoes, cucumber and red onion, soaked with olive oil and white wine vinegar, gets better as the flavours soak into the ciabatta. Pop it in a plastic container in the morning, it’ll be twice as good when it comes out the other side.
Dessert
Finish the meal off with something sweet, like Merrilees Parker’s Pecan Slice. The crisp shortbread on the bottom and delicious chewy nut caramel on top are irresistible.For lemonheads, there’s also Mary Berry’s Lemon Drizzle Tray Bake. Cut it into fingers of moist cake, you’ll relish the tangy topping. But beware the sticky fingers!
