Hi, I have been given a Breville 4.5 litre SC for my birthday and am a little confused. I have been looking through all the recipes on this site and note that most of them say cook on low heat. My SC has 3 settings, low ("a keep warm function only and is usefull whilst waiting to serve meal"), medium ("gently simmers for an extended period of time, cooking time approx 8 - 12 hours") and High ("cooks food in half the time, cooking time 4 - 8 hours").
If a recipe says cook on low am I right to assume that I should cook it on the medium setting? I've never used one before and am debating doing roast beef at the weekend but need to know what temp to do it at. Any help would be most appreciated.
