Hi! A raita is made with yogurt and a combination of ingredients.
For an onion raita I would add chopped onion, chopped green chilli and chopped coriander to yogurt. No measurements really as all of this is to taste.
other combinations: yogurt, mint, coriander with a bit of sugar
yogurt, tomato, onion, coriander and green chillis

Hi. Are there ( will there be ) any books accompanying Gary Rhodes Across India / China / Caribbean? I am particularly interested in the Caribbean series.
I know we can get the recipes online but these are for gifts.

Rhodes Annoys the Caribbean Now...
I think he is a lot better than he was on his India Trip. I am really enjoying this series. More so because of the locals and their passion for their cuisine. What I can't understand is Mr Rhodes need for 'HIS modern twist' to the local classic dishes.
I love the way he tries to add the chefy touch on presentation where I think just a plonk on a plate would be more like it! This sort of food is not the type that you will see featured at restaurants with small portions on huge plates.
I live near a market that stocks all the ingredients needed for a Caribbean meal and am looking foward to trying all the recipes!

large clothes allow Freedom of movement and they are airy - avoid over heating.
cookbooks - once my husband banned me from ordering any more books I got around the problem by starting a Cook Book book club (we were on a posting abroad)where a person purchases the a book for every member and hosts a dinner using the recipes from the book. We had great fun doing this. I M INCORRIGIBLE.

I'm suprised at Mr. Rhodes' demeanour
I stopped watching this programme after the bengali segment as I did not appreciate Gary Rhodes attitude. By the sounds of it (all your comments) the banquet was not a success. Bread and Butter pudding...hmm...the Indian version is called Shahi Tukra and it is divine (bread, sugar, cream, saffron etc). There are plenty of desserts he could have made; kHUBANI KA MEETA (Dried Apricot dessert) from Hyderabad, Gajar ka halwa (carrot dessert0, Gulab Jamun, Ras Malai to name a few. It is unfortunate that the series was so disappointing the concept behind it was a good idea.

Gosh am I glad that I am not the only one who feels that Mr Rhodes is missing the point. It is so irritating when he doesn't put the amounts suggested by the local chefs. The Bengali segment was the most frustrating.
Indian cuisine as demonstrated is very varied. I would have liked to seen a little more interaction with the chefs comparing the difference in the spices used in different regions.

Hello. I need some advice. In my family we do not eat pork / ham. In the past (in Indonesia actually) we got over recipes using bacon by adding beef bacon instead. does anyone know where I can find this ingredient?
