These brownies have three different chocolate varieties with a mixture of dark, milk and white chocolate. I recommend Valrhona or Lindt chocolate.

Ingredients

  • 225g Dark Chocolate (70% Coca)
  • 150g milk chocolate
  • 150g white chocolate
  • 400g caster sugar
  • 6 Large Organic Eggs
  • 350g unsalted butter, Cubed
  • 2 vanilla pods, Split

Method

1. Preheat your oven to 160 degrees or Gas Mark 3.2. Line the baking tray well with grease-proof paper (11"/28cm X 8 1/2"/21.5cm approx).3. Melt the butter, dark chocolate and milk chocolate in a pyrex bowl over a low heat.4. Mix the eggs, vanilla and sugar well on a medium speed for about 8-10mins until light and velvety.5. Fold in the egg mixture and melted chocolate.6. Pour half the mixture evenly onto your lined baking tray.7. Spread the white chocolate chunks over the mixture evenly and pour over the remaining mixture.8. Bake for 50mins.9. The brownies are done when you stick a skewer into the centre and it comes out clean.
