Use purple carrots if you can get your hands on them in this great veg side dish from Sam Herde


1. Peel and roast carrots at 200C/fan 180C/gas 6 in olive oil for 40min.

2. Allow to cool slightly and then place in bowl and toss with other ingredients.


  • 3 bunches carrots, purple carrots if available
  • 1 bunch of carrot, Dutch carrots if available
  • A handful of coriander leaves
  • A handful of dill
  • 1 tsp honey
  • 1 tbsp currants
  • 1.5 tsp dukkah spice mix
  • The juice of half a lemons
  • olive oil
