Method

1. Mix together the flour, eggs and milk.

2. Heat a little oil in a heavy frying pan and as it starts to smoke, pour in just enough batter to thinly coat the base of the pan. Cook until golden, then turn the pancake over and cook other side until golden.

3. Stack the cooked pancakes on a plate and, if you’re not eating them straightaway, cover with cling film or foil to stop them from drying out.

Make sure you stir the batter every time that you're about to pour it into the pan. Who would have thought it could be this simple and delicious to make gluten free pancakes! Truly scrummy.

These work great, I used flora cuisine in the pan. Don't taste gluten free either, there as good as the ones i make for the rest of the family.

Tried these on Shrove Tuesday and the rest of the family agreed that they were better than the usual pancakes. I had pancakes which didn't make me ill - wonderful.

These pancakes are outstanding - and you really wouldn't know they were gluten free!
