Bill Granger makes the most of late summer’s berry bounty with this quick and easy treat


1. Put the sugar in a saucepan with 60ml of water and stir over a low heat until the sugar has dissolved.

2. Increase the heat under the pan and bring the syrup to the boil. Cook until the syrup is golden, then remove from the heat.

3. Mash the blackberries with the vanilla extract and stir into the syrup. Leave to cool before serving with ice cream.


  • 220 g caster sugar
  • 100 g fresh blackberries
  • 1 tsp vanilla extract
  • blackberry ice cream, to serve

Hi Francisca, thanks for your comment and glad you like the look of this recipe. If Bill Granger has his own recipe for blackberry ice cream he didn't share it unfortunately. Howevver, this strawberry ice cream recipe is great because you can easily swap the fruit and it's really simple to follow. Try using blackberries instead: [link]

Very rightly so Gloriam and also I would love to have the recipe of the blackberry ice cream! I am not here looking for recipes of simple sauces and shop bought ice cream... Since I bought my ice cream maker I never bought ice cream in the shop again! Of coruse I can find a recipe of Blackberry ice cream somewhere else but why didn't this chef include his? That said I think that this is a lovely ice cream and nice on the eye as well! I am going to try it.....

Unless you strain the blackberries you get a mouthful of pips!
