Rachel Allen’s roast duck recipe couldn’t be easier, and any leftovers can be torn into strips and tossed in a salad

Method

1. Preheat the oven to 200C/180C fan/gas 6.

2. Place the duck legs skin side up in a small roasting tin, season with salt and pepper and roast in the oven for 1 hour or until the skin is a rich golden brown and the meat comes away from the bone easily.
