Perfect as a dip, sandwich filling or canapé topping, Clodagh McKenna’s fish mousse couldn’t be easier to make

Method

1. Place all the ingredients in a food processor and whizz until smooth. Season with salt and pepper and serve with toasted soda bread.

Tips and suggestions

You can also make smoked salmon and caper mousse by adding 1 tsp of drained and rinsed capers before blending, or mackerel and lemon mousse by replacing the smoked salmon with smoked mackerel.
