Thai fish cakes

Ingredients

  • ½ bunches spring onion, finely chopped
  • ½ red chilli, finely chopped
  • 1 cm ginger, peeled and grated
  • 1-2 tbsp Thai green curry paste
  • 4 tbsp desiccated coconut
  • 1 packets Tilda Lime and Coriander Steamed basmati rice
  • 1 x 170g can white crab meat, well drained
  • 1 lime zest
  • 1 small bunch coriander, chopped
  • 2 eggs, beaten
  • 200 g white breadcrumbs
  • sunflower oil, to fry

To serve

  • sweet chilli sauce
  • 2-4 lime wedges

Method

1. In a food processor, lightly mix together spring onions, chilli, ginger, curry paste, coconut, rice, crab, lime zest, and coriander. Add one beaten egg to bind. If you find the mixture too wet, add a handful of the breadcrumbs until the mixture binds.

2. Shape the mixture into small balls with your hands. Chill for 20 minutes then coat in the breadcrumbs.

3. Fry in a little oil for 3-4 minutes until crisp, golden brown and piping hot all the way through.

4. Serve with sweet chilli dipping sauce and lime wedges.

Well I take my hat off to all you clever cooks who managed to make this work. I found it almost impossible to make them bind together. I eventually did and put them in the fridge for an hour. However they fell apart again on trying to coat with bread crumbs.Ended up using as fried rice as too expensive to throw away.Don't really see how they could bind though with hindsight Good luck if you try xx

Hi everyone! We've tested the recipe some more, and have now added extra breadcrumbs to the mixture to ensure it binds together. Let us know how it goes!

I tried this recipe the other night when I had friends over, and it was absolutely delicious. I added some extra breadcrumbs and the fishcakes bound together fine.

Hi NoraR, yes followed the recipe to the letter. Also watched the video beforehand to make sure I knew what to do.

Hi Lynne sorry to hear you had trouble with this recipe. Did you use pre-prepared basmati rice as suggested?

This is probably the worst recipe I have tried for thai fish cakes. They fell apart, even after adding extra breadcrumbs. Even when they did stay whole, once you put the fork into them, bingo! In the end we ate them as a rice dish with some salad. Would not cook again, not enough ingredients to bind them.
