- Pancit noodles are medium-thick rice noodles, available in most Filipino or Asian supermarkets. If you can't find them, you can use any other rice noodles – simply follow the rehydration instructions on the packet.
This dish is a great way to use up scraps and leftovers. Swap the beef for prawns if you like.
Ingredients
- 110g Pancit Rice noodles
- 2 tsp Olive oil
- 1 large white Onion, thinly sliced
- 170g onglet or sirloin beef steaks, sliced 1cm thick
- 170g Chinese Cabbage, thinly sliced
- ¼ tsp ground black pepper
- 3 tbsp Soy sauce
- 1 splash Fish Sauce
- 1 tsp chilli sauce
- 1 lime, juice only
- 1 hard-boiled Egg, sliced
- 2 tbsp chopped Spring onions
- 1 small handful Coriander
Method
1. Soak the noodles in a large bowl of warm water for 5 minutes to rehydrate them, then drain.2. Heat the olive oil in a wok or large, heavy-based frying pan over a medium-high heat. Add the onion, garlic and beef and stir-fry for 1-2 minutes, or until the meat if browned on the outside.
3. Tip in the noodles and stir-fry for 2 minutes, then stir in the cabbage and toss together for 1 minute.
4. Stir in the black pepper, soy sauce, fish sauce and chilli sauce and conintue cooking for 2 minutes.
5. Stir in the lime juice. Scatter over the hard-boiled egg, spring onion and coriander and serve.

In Asia we use lots of boiled eggs or other kind because eggs are not as cheap as in UK/Ireland. So it's a bit of luxury on any dish and we love them :-)
